Ancient Forest Pu-Erh Tea

Pu-erh is a rare, fermented tea that can be found in Xishuangbanna, China. Based on the article in Smithsonian Magazine, this tea is made from wild tea leaves that grow in an isolated mountain region in China’s southwestern Yunnan province and requires a lengthy process.

After drying the leaves on wooden racks, they are cooked over hot fire to prevent full oxidation. After that, the leaves are rolled and kneaded to disperse any excess moisture, and formed into solid cakes that ferment for months.
