Steps in Cooking Pasta alla Norma:
Step 1 – Put your racks on the upper and lower thirds of the oven and preheat the over to 375 degrees Fahrenheit. Put two (2) large rimmed baking sheets with parchment paper.
Step 2 – Mix eggplant, vinegar, and three (3) tablespoons of oil in a large bowl. Toss it to coat.
Step 3 – Divide the mixture evenly on the sheets into even layers. Bake it until the eggplant is golden-brown and tender. It may take 35-40 minutes. Rotate the pans between the top and bottom racks.
Step 4 – Heat the remaining one (1) tablespoon oil in a large Dutch oven over medium heat. Add garlic and stir for around one (1) minute until it is tender.
Step 5 – Stir in tomato paste until its color darkens. It may take around one (1) minute.
Step 6 – Add tomatoes, fennel seeds, basil sprig, salt, and crushed red pepper. Bring to boil over medium-high heat. Bring to boil over medium-high heat.
Step 7 – Reduce heat to medium-low and allow it to simmer. Stir occassionally and break the tomatoes using the back of the spoon.
Step 8 – Wait until the mixture becomes thick. Remove from heat and remove the basil sprig.
Step 9 – While allowing the sauce to simmer, heat water over medium-high heat. Add some pasta and cook it based on the instructions in the packaging. Drain it after cooking.
Step 10 – Stir the baked eggplant into the tomato sauce, add the pasta and the cooking water, and stir them until they’re evenly coated.
Divide your Pasta alla Norma among six (6) bowls and top each with Ricotta salata. You may also add some basil leaves.
